The day before grocery shopping day reminds me of laundry day. You have to hunt and pick through what you have to come up with something decent. Thankfully this time, I happened to have ingredients that meshed VERY well together (the equivalent of finding clean pants… yay!). It’s not your classic stir-fry, but it’s a darn good version of it!
Fish & Stir Fry Medley
Veggie Ingredients:
- 2 Small Carrots
- 1 Large Celery Stalk
- 2 Onion Slivers, Chopped Coarsely
- 1/2 tsp Minced Garlic
- 1 tsp Olive Oil (or oil of choice)
- 1 tsp Liquid Aminos (I used Braggs. If you don’t have this, sub for low-sodum soy sauce)
Fish Ingredients:
- 1 White Fish Fillet
- Cayenne Pepper
- Paprika
- Sea Salt
Directions:
Chop carrots into equal size slivers and steam for about one to one and a half minutes. While carrots are steaming, slice onions and celery. Add olive oil to pan and heat on medium. Add onion and garlic and allow to simmer for a few minutes, then add carrots and liquid aminos. Heat another pan on medium heat with olive oil and sprinkle spices on both sides of fish. Add fish to pan. After a couple minutes, add celery to veggies (if you add them too soon, they will lose their delicious crunch). Make sure to flip & stir every once in awhile to keep the veggies from burning. Flip the fish and allow to finish cooking. Fish is done when it’s white (not pearlescent) all the way through and flakes easily. Serve together and enjoy!
