I admit it. I’m lazy.
My parents will vouch for me on that one. I’ve been lazy since birth. It’s something I have to fight on a daily basis. I’m a person that prefers my meals to be short and simple (unless of course I’m cooking for more than just myself). This fishy little number is the perfect solution for my fellow lazy-bums out there. The sweetness of the salmon, paired with the zing of garlic and a kick of chile pepper makes this dish delicious and satisfying.
My family and I were sent a large box of amazing salmon from Rachel McLish. If you don’t know who Rachel is.. well… you should! She is an absolute inspiration. She has truly discovered the “fountain of youth”, which you may have guessed, starts with your nutrition and exercise habits. The company she sent us salmon from is called Vital Choice. Anything that’s good enough for Rachel, is good enough for me!!
But, I digress! On to the food!
Spicy Garlic Salmon
Ingredients:
- 2 Wild-Caught Salmon Fillets
- 1 TB Coconut Oil (or oil of choice)
- Garlic Powder (to taste)
- 1 tsp Dried Parsley Flakes
- 1/2 tsp Ancho Chile Pepper
- Pinch of Pink Himalayan Sea Salt (regular sea salt works as well)
Directions:
Add coconut oil to a pan and heat on medium. While the pan is heating up, sprinkle spices on the salmon. When the oil melts, add the salmon fillets. Cook on either side until the inside is no longer bright pink and it flakes when you stick a fork in it. It should be a light pink color all the way through. Serve with your choice of steamed veggies. You could also make this a heartier meal by adding brown rice to the equation. But that’s a lot more work than us lazy people care
