Avocado & Blue Cheese Chicken Salad
Ingredients:
- 3 oz Boneless, Skinless Chicken Breast
- 1/4 Cup Garbanzo Beans
- 1 oz Blue Cheese (or cheese of choice – chopped nuts are another great option)
- 1/4 Avocado
- 3 Cups Romaine Lettuce (spinach or kale are also great!)
- Steamed Broccoli
- Sliced Onion (to taste)
- 2 TB Balsamic Vinegar
- Pepper (to taste – optional)
Directions:
Broil, boil, grill or bake boneless, skinless chicken breast. Allow to cool enough to handle and chop into bite size pieces (or shred if preferred). Steam broccoli and slice onion. Measure out remaining ingredients, toss into medium-size bowl and enjoy! Serves 1
