After skimming pinterest for a few hours (yes, I admit I’m a pinterest addict!) I was inspired by all of the pictures of fresh summer fruit! I decided to throw a few things together for lunch and it actually turned out way better than I was expecting! If you are looking for something simple, quick and refreshing, this salad is absolutely amazing. It’s so easy and can be made to serve multiple people for say, a barbeque or pool party!
Healthy Summer Berry Salad
Ingredients:
- 3-4oz Skinless Chicken Breast (shredded or chopped)
- Handful of Fresh Blueberries
- 3 Medium Strawberries (sliced or chopped)
- 3 Cups Romaine Lettuce
- 2 TB Balsamic Vinegar
- 1 TB Olive Oil
Directions:
Grill, bake, broil or boil skinless chicken breast. Shred or chop as desired. Rinse berries and lettuce and lightly pat dry. Chop strawberries to desired size. Add all ingredients to a medium/large salad bowl and toss. Serve and enjoy!
