Growing up, I remember that around the time school started up again my mom would bake banana bread. I can still smell the wonderful aroma that wafted through the house and it conjures up memories of back-to-school clothes, fresh pencils and new books. I recently got a craving for this old-taste-treat and decided to make a cleaned up version for myself! Eating healthy does NOT mean food has to be boring! There are plenty of ways to enjoy even the classic, decadent, taste-treats! With some simple swaps, I created a healthier version of this classic!
BANANA SPICE PROTEIN MUFFINS
DRY INGREDIENTS:
- 3/4 Cup Organic Coconut Flour
- 2 Scoops Gaspari Myofusion Protein Powder in Banana Perfection (could sub with Vanilla)
- 1/2 Cup Stevia (could sub with Ideal)
- 1 tsp Baking powder
- 1 tsp Baking soda
- 1/2 tsp Cinnamon
- 1/2 tsp Nutmeg
WET INGREDIENTS:
- 1 Cup Mashed Very Ripe Banana
- 1/2 Cup Liquid Egg Whites
- 6 oz Plain Greek Yogurt
- 1 tsp Vanilla Extract
Pre-Heat oven to 350 degrees Fahrenheit. Spray muffin tin with non-stick spray and set aside. Mix dry ingredients in one bowl and set aside. Mash 1 cup very ripe banana and mix that with the rest of the wet ingredients until all lumps are gone. Combine dry and wet ingredients and mix completely. Separate batter equally into the muffin tray. Bake for 16-20 minutes. Toothpick should come out clean when they are done. Set on a cooling rack to cool. ENJOY =)
